Our lives move so quickly that sometimes we do not have time to enjoy the things we love the most.

Corn meal porridge is something I didn’t care for as a child because I much preferred to eat Lucky Charms or Fruity Pebbles. Clearly, I was missing out! It’s so delicious, filling and healthier than most packaged breakfast foods. Some like it with a lot of spice, while others like it plain and thick. It is more time-consuming to prepare that breakfast cereal of course, so it can be a little difficult if you are rushing in the morning. (Unless you buy the instant porridge that they sometimes have in Publix!)

I suggest adding this to your meal prep! It’ll give you a couple of extra Z’s in the a.m. and will keep you full until lunch!

1/2 cup of cornmeal
2 1/2 cups of milk (or water)
2 teaspoons of vanilla extract
One cinnamon stick
Sweetener to taste ( condensed milk is my favourite)

Bring milk (or water) to a boil and reduce heat to medium. Slowly stir in all ingredients until smooth. You must continue to stir the cornmeal as it will lump up and begin to stick. If it is too thick, add a little water. If it isn’t thick enough, more milk (water) and cornmeal.
