Disclaimer: I have cravings that I almost always obey and rarely have regrets. Since I am no longer on my get it right-summa body-band launch-diet, I am a little more liberal as to what I eat as you will see in this post and more to come. I truly believe that if there is balance and you don’t over do it, you’ll be just fine.
Now on to this bomb recipe…
I randomly get cravings for corned beef (cawn beef) aka bully beef and I can’t really explain why. I love savory food and turning something so simple into a nice home cooked meal. It’s a Caribbean favorite and quick and easy to make. Although the salt content is high, adding other seasonings such as onion powder, black pepper, fresh produce like bell pepper, onion, garlic, and tomato makes it so good. Make sure you sauté the veggies in coconut oil to give it that extra flavor.
1 can of corned beef
½ teaspoon of black pepper (to taste)
½ teaspoon of onion powder
1 scotch bonnet pepper (to taste)
1 sweet pepper
3 tbsp of water
Chop up onion, tomato, sweet pepper, and hot pepper.
Mix beef, black pepper, and onion powder in a bowl.
Heat oil in frying pan.
Add onion, tomato, sweet pepper, and hot pepper on medium heat and fry until onions are a light golden brown. **Anything too long and it will change the taste of the oil and onions too brown**
Add beef and water to onion/pepper mixture and cook for about 5-8 minutes.
My favorite way to eat it is with white rice, cabbage, and sweet plantain. Yum!
